Born in Rouen, France, Arnaud Donckele grew up in Mantes-la-Jolie with parents who were charcutiers-traiteurs (butchers and caterers).
His childhood experiences on his grandparents’ Normandic farm instilled in him a deep appreciation for cultivation and direct contact with producers.
At 16, he moved to Paris to pursue a BEP (Brevet d’Études Professionnelles) in cooking, despite initial reservations from his parents.
Donckele trained at the École Ferrandi and worked with renowned chefs such as Georges Landriot at Goumard Prunier.
His culinary journey led him to Alain Ducasse’s restaurants, including Restaurant Louis XV in Monaco and Plaza Athénée in Paris.
In 2004, Donckele became the chef of La Vague d’Or at the luxury hotel La Résidence de la Pinède in Saint-Tropez.
