Michael Wignall’s childhood was filled with flavors, handmade food, and food-travel adventures. His mother’s daily baking and exposure to diverse cultures shaped his palate.
Although he initially dreamed of becoming a professional BMX rider, his parents encouraged him to attend catering college. His love for Spanish cuisine blossomed during a stint in Spain, especially in San Sebastian.
Wignall’s culinary journey began at Broughton Park under Paul Heathcote. He continued to refine his skills at various restaurants, including John Burton Race’s L’Ortolan.
His breakthrough came at Old Beams in Staffordshire, where he earned his first Michelin star. The restaurant was also named the Good Food Guide’s Country Restaurant of the Year.
Currently, Michael Wignall serves as the executive chef at The Angel at Hetton.
His approach is highly technical, combining classical themes with modern techniques. His dishes are complex yet deliver light, elegant flavors and exciting textures.
The restaurant received its first Michelin star in 2009 and a second in 2012.
