Overview
Pascal Barbot is a talented French chef known for his culinary expertise and innovative approach.
After graduating from the hotel school in Vichy, Barbot embarked on his cooking career. He gained experience at the Buron de Chaudefour in Chambon-sur-Lac, Puy-de-Dôme, and later worked at the restaurant Saveurs in London under Joël Antunes. His culinary adventures even took him to New Caledonia, where he served as the chef to the Pacific admiral during his national service in the Navy.
From 1994 to 1998, Barbot worked alongside the renowned chef Alain Passard at L’Arpège in Paris. During this time, the restaurant achieved a prestigious three Michelin stars.
In 2000, Barbot, along with fellow chef Christophe Rohat (also a former L’Arpège chef), opened L’Astrance in Paris. The restaurant quickly earned its first Michelin star within five months and eventually reached the pinnacle of three Michelin stars in 2007. For over a decade, L’Astrance was a beacon of culinary excellence, consistently attracting diners with its inventive cuisine and impeccable service. Notably, it held a spot among The World’s 50 Best Restaurants, ranking 13th in 2011.
In 2019, the Michelin guide adjusted L’Astrance’s star rating, demoting it to two Michelin stars. However, Barbot and Rohat didn’t rest on their laurels. In 2020, they relocated the restaurant to a larger space, ensuring that their commitment to exceptional dining experiences continued.
Pascal Barbot has not only delighted diners but also mentored several talented chefs. Among those he has trained are Jacob Holmström, Magnus Nilsson, Adeline Grattard, Tatiana Levha, Agata Felluga, and Manon Fleury.
